Requires Management responsibilities for the team (includes people, budget and planning).
· Plans and supervises preparation of meals according to menu guides and ensure adherence to standard recipes and specifications, and nutritional guides;
· Conducts periodic taste tests;
· Supervises the preparation of daily menu in place and ensures that all sections within the kitchen are ready for service according to set schedule;
· Develops procedures to avoid food waste and counsels kitchen staff accordingly;
· Determines amounts per serving for packaging of prepared foods;
· Develops and communicates packaging and storage guidelines to subordinate staff ( e.g. air tight containers, appropriate temperature levels, garnishing standards);
· Ensures storage area is stacked with for required raw foods, ingredients and packaging materials;
· Reports on the quality of procured raw foods and ingredients;
· Ensures food preparation standards are being totally complied with temperature requirements and nutritional specifications; facilitate quality checks with Quality Control;
· Monitors compliance with ISO and HACCP standards as set by Quality Control and governmental bodies during food preparation and waste disposal;
· Conducts random inspections to ensure maintenance of high level of sanitation standard and that the food preparation area is kept clean at all times;
· Ensures that all kitchen staff have a complete understanding of policies relating to Fire, Hygiene, Health and Safety;
· Ensures that all kitchen equipment users adhering to standard operating procedures and machine operational instructions;
· Implements procedures & practices to minimize employee injury (cuts, burns).
